  1. Ingredients:

    Basmati Rice - 2 cup
    Water - 3 cup
    Oil - 2 tbsp
    Ghee - 2 tbsp
    Bay leaf - 3(small)
    Cinnamon stick - 1
    Cumin seeds - 1/8 tsp
    Cloves - 5
    Star anise - 1
    Fennel seeds - 1 tsp
    Pepper - 5 nos
    Cardamom - 3
    Garlic - 4 cloves
    Ginger - 1 inch
    Onion (medium size) - 2 (sliced)
    Green chillies - 2 (slitted)
    Turmeric powder - 1/2 tsp
    Salt - 2 tsp
    Tomato (big) - 1 (finely chopped)
    Red Chilli Powder - 1 tsp (or 2 tsp for more spicy)
    Garam Masala powder - 1 tsp
    Mushroom - 200g (roughly chopped)
    Curd (Yogurt) - 1/4 cup
    Mint Leaves - 1/4 cup (finely chopped)
    Coriander - 1/4 cup (finely chopped)

  2. Method of Cooking:

    Rinse and Soak Basmati rice in water for 25 minutes
    Heat a large kadai
    Add Oil - 2 tbsp
    Ghee - 2 tbsp
    Add Bay leaf - 3(small)
    Cinnamon stick - 1
    Cumin seeds - 1/8 tsp
    Cloves - 5
    Star anise - 1
    Fennel seeds - 1 tsp
    Pepper - 5 nos
    Cardamom - 3
    Give a stir
    Turns aromatic
    In a pestle crush
    Garlic - 4 cloves
    Ginger - 1 inch
    Add freshly crushed Ginger garlic paste
    (or GingerGarlic paste - 1.5 tbsp)
    Saute 30 seconds
    (Don't burn)
    Add Onion (medium size) - 2 (sliced)
    Green chillies - 2 (slitted)
    Turmeric powder - 1/2 tsp
    Salt - 1 tsp
    Saute, until onions become translucent in medium flame.
    Don't burn
    Add Tomato (big) - 1 (finely chopped)
    Saute until tomato cooks completely
    Once tomatoes are nice and soft and oil seperates
    Add Red Chilli Powder - 1 tsp (or 2 tsp for more spicy)
    Garam Masala powder - 1 tsp
    Salt - 1tsp
    Mix well for 30 - 45 seconds.
    Turns aromatic and oil seperates.
    Add Mushroom - 200g (roughly chopped)
    (You can also use other veggies of your choice)
    Saute well for 3-4 minutes and cook the mushroom to 50percent, to retain crunchiness.
    Add Curd (Yogurt) - 1/4 cup
    Give a stir
    Add Mint Leaves - 1/4 cup (finely chopped)
    Coriander - 1/4 cup (finely chopped)
    Mix well.
    Add Soaked Basmati rice
    Give a mix
    Add Water - 3 cup
    Add salt if required
    Mix gently
    Once it comes to a boil
    Cover and cook on low to medium heat for 8-10 minutes or until the water absorbed fully and rice is cooked well.
    (If need stir gently once after 5 minutes to avoid burning)
    (You can also Pressure cook for 1 whistle on a medium flame)
    Mix gently, so that rice won't break.
    Our Easy and delicious Mushroom Biryani is ready to serve!!!
