Instructions
  1. Ingredients:

    Ghee - 1.5 tbsp
    Oil - 1.5 tbsp
    Bay leaf - 1
    Cinnamon stick - 2(small)
    Cardamom - 3
    Cloves - 5
    Fennel seeds - 1/2 tsp
    Pepper - 1/8 tsp
    Cashews - 10 - 15
    GingerGarlic - 1 tbsp (finely chopped)
    (or GingerGarlic paste - 1 tbsp)
    Onion (medium size) - 2 (sliced)
    Green chillies - 3 (slitted)
    Salt - 1/2 tsp
    Beans - 1/2 cup (finely chopped)
    Carrot - 1/2 cup (finely chopped)
    Fresh Green Peas(or frozen) - 1/2 cup
    Potato - 1/2 cup (roughly chopped)
    Cauliflower - 1 cup (chopped and rinsed in hot water)
    Basmati Rice - 1 cup
    Water - 1.5 cup (or coconut milk)
    Salt - 1/2 tsp( or as required)
    Coriander - few (finely chopped)
    Lemon juice - 1/2 tsp (optional)

  2. Method of Cooking:

    First rinse and soak Basmati Rice - 1 cup in water for 20 minutes
    Heat a pressure cooker on medium flame
    Add ghee - 1.5 tbsp
    Oil - 1.5 tbsp
    Bay leaf - 1
    Cinnamon stick - 2(small)
    Cardamom - 3
    Cloves - 5
    Fennel seeds - 1/2 tsp
    Pepper - 1/8 tsp
    Cashews - 10 - 15
    Give a nice mix
    Turns aromatic
    Add GingerGarlic - 1 tbsp (finely chopped)
    (or GingerGarlic paste - 1 tbsp)
    Saute 30 seconds
    (Don't burn)
    Add onion (medium size) - 2 (sliced)
    Green chillies - 3 (slitted)
    Salt - 1/2 tsp
    Saute, until onions become translucent in medium flame.
    Don't burn
    Add Beans - 1/2 cup (finely chopped)
    Carrot - 1/2 cup (finely chopped)
    Fresh Green Peas(or frozen) - 1/2 cup
    Potato - 1/2 cup (roughly chopped)
    Cauliflower - 1 cup (chopped and rinsed in hot water)
    Saute 1-2 minutes
    Now add Soaked Basmati rice
    Give a gentle mix
    Add Water - 1.5 cup
    Salt - 1/2 tsp( or as required)
    Coriander - few (finely chopped)
    Lemon juice - 1/2 tsp (optional)
    Mix gently
    Cover and pressure cook for 1 whistle on medium flame
    Give a gentle mix, so that rice won't break.
