  1. Ingredients:

    For Cooking Rice:

    Diabetic Rice - 1 cup
    Oil - 1 tsp
    Salt - ½ tsp
    water (as required)

    For Diabetic Fried Rice:

    Oil - 2 tbsp
    Garlic - 2 tbsp (finely chopped)
    Ginger - 1 tbsp (finely chopped)
    Onion - 1 sliced (half lengthwise)
    Salt - 1 tsp
    Green Chilli - 1
    Carrot - 1/2 cup (finely chopped)
    Cabbage - 2 tbsp (sliced)
    Purple Cabbage - 2 tbsp (sliced)
    Cauliflower - 1 cup (chopped and rinsed in hot water)
    Beans - 1/2 cup (finely chopped)
    Fresh Green Peas - 1/2 cup
    Spring onion - 1/2 cup (finely chopped)
    (You can also add veggies of your choice)
    Light Soy sauce - 2 tbsp (Dark Soy sauce - 1 tbsp)
    Chilli sauce - 1 tbsp
    Freshly grounded pepper - 1 tsp
    Finally Salt - (as required)

  2. Method of Cooking:

    For Cooking Rice:
    Soak the Diabetic rice in water for 20 - 25 minutes
    (You can Follow same procedure for Basmati rice)
    Boil 4 - 5 cup water
    Add Salt - ½ tsp
    Oil - 1 tsp (To get perfect strands of rice)
    Add rinsed Diabetic rice
    Mix well
    Boil 10 minutes
    Cook the rice to 80%
    (Don't over cook the rice)
    Drain off the water
    Spread the rice in a plate to stop cooking process.

    For Diabetic Fried Rice:
    Heat a large kadai
    Add oil - 2 tbsp
    Add Garlic - 2 tbsp (finely chopped)
    Ginger - 1 tbsp (finely chopped)
    Stir-fry for 30 seconds in high flame
    Don't burn
    Add Onion - 1 sliced (half lengthwise)
    Saute well
    Salt - 1 tsp
    Green Chilli - 1
    Stir-fry, until onions become translucent in high flame.
    Don't burn
    Add Carrot - 1/2 cup (finely chopped)
    Cabbage - 2 tbsp (sliced)
    Purple Cabbage - 2 tbsp (sliced)
    Cauliflower - 1 cup (chopped and rinsed in hot water)
    Beans - 1/2 cup (finely chopped)
    Fresh Green Peas - 1/2 cup
    Spring onion - 1/2 cup (finely chopped)
    (You can also add veggies of your choice)
    Stir-fry the veggies in high flame
    Add sugar - 1/2 tsp to retain color
    Cook the vegetable to 80percent, to retain crunchiness.
    Add Light Soy sauce - 2 tbsp (If Dark Soy sauce use 1 tbsp)
    Chilli sauce - 1 tbsp
    Freshly grounded pepper - 1 tsp
    Stir-fry until the sauces are combined well in high flame.
    Add cooked Diabetic rice.
    (In high flame) Mix it gently, so that rice won't break.
    Add Salt - (as required)
    Mix gently.
    Garnish with spring onions!!!
