  1. Ingredients:

    Basmati Rice - 1 cup
    Oil (Ghee) - 3 tbsp
    Bay leaf - 2
    Cinnamon stick - 1
    Poppy seeds - 1/4 tsp
    Star anise - 1
    Cardamom - 3
    Cloves - 5
    Cumin seeds - 1/4 tsp
    Fennel seeds - 1/2 tsp
    Ginger Garlic - 2 tbsp (finely chopped)
    (or Ginger Garlic paste - 2 tbsp)
    Onion - 2(sliced)
    Green chillies - 3 (slitted)
    Salt - 1 tsp
    Fresh Green Peas (or Frozen) - 1.5 cup
    Coconut milk(water) - 1.5 cup
    Mint Leaves - few

  2. Method of Cooking:

    Take Garlic - 4 cloves
    Ginger - 1 inch, chop finely
    Keep aside.
    Rinse and Soak Basmati rice - 1 cup in water for 25 minutes
    Heat Oil (Ghee) - 3 tbsp on a large kadai
    Add Bay leaf - 2
    Cinnamon stick - 1
    Poppy seeds - 1/4 tsp
    Star anise - 1
    Cardamom - 3
    Cloves - 5
    Cumin seeds - 1/4 tsp
    Fennel seeds - 1/2 tsp
    Give a stir
    Turns aromatic
    Add Ginger Garlic - 2 tbsp (finely chopped)
    (or Ginger Garlic paste - 2 tbsp)
    Saute 30 seconds
    (Don't burn)
    Turns aromatic
    Add Onion - 2(sliced)
    Green chillies - 3 (slitted)
    Salt - 1 tsp
    Saute, until onions become translucent on medium flame.
    Don't burn
    Add Fresh Green Peas (or Frozen) - 1.5 cup
    Mix well, Cover and cook on medium flame for 5 minutes
    Add Soaked Basmati rice
    Give a gentle mix
    Add Coconut milk(water) - 1.5 cup
    Mint Leaves - few
    Mix gently
    Once it comes to a boil
    Cover and cook on low to medium heat for 10-15 minutes or until the milk absorbed fully and rice cooked well.
    (If need stir gently once after 5 minutes to avoid burning)
    (You can also Pressure cook for 1 whistle on a medium flame)
    Mix gently, so that rice won't break.
    Top with Roasted cashews (optional)
