Paste for kadappa :
Cashew - 6
Poppy seeds - 1 tsp
Grated coconut - 1/2 cup
Water - 1/2 cup
For Kadappa:
Ghee or Oil - 2 tbsp
Cinnamon stick - 1 (big)
Bay leaf - 1
Cloves - 4
Cardamom - 4
Fennel seeds - 1/2 tsp
Freshly crushed Ginger garlic paste - 2tbsp
Onion (medium size) - 2 (sliced)
Curry Leaves - 1 strand
Salt - 1 tsp
Green chillies - 2 (slitted)
Turmeric powder - 1/4 tsp
Tomato (medium size) - 1 (finely chopped)
Carrot - 1/2 cup (sliced)
Potato - 1 cup chopped
Cauliflower(Rinsed) - 150g
Peas - 1 cup
Moong dal (Paasi Paruppu) - 1/2 cup
Salt - 1 tsp (or as required)
Water - 1 cup (or as required)
Lemon juice - 1tsp
Coriander leaves - for garnishing(finely chopped)
In a Pressure cooker
Add Rinsed Moong dal(Paasi Paruppu) - 1/2 cup
Water - 2 cup or (as required)
Cover and pressure cook for 4-5 whistles or until dal is cooked well.
Mash it and keep aside
Soak cashew - 6 and poppy seeds - 1 tsp in 1/2 cup of water for half an hour
Keep aside
In a Mixer jar, add grated coconut - 1/2 cup
In a bowl place a sieve, strain the mixture
Add the mixture to the mixer jar Grind without adding water
Add the strained water
Grind into a fine paste
Keep aside
Heat a large kadai in medium flame
Add Ghee or Oil - 2 tbsp
Cinnamon stick - 1 (big)
Bay leaf - 1
Cloves - 4
Cardamom - 4
Fennel seeds - 1/2 tsp
Give a s Turns aromatic
Add freshly crushed
Ginger garlic paste - 2tbsp
Saute 30 seconds (Don't burn)
Add Onion (medium size) - 2 (sliced)
Curry Leaves - 1 strand
Salt - 1 tsp
Green chillies - 2 (slitted)
Turmeric powder - 1/4 tsp
Saute, until onions become translucent in medium flame.
Don't burn
Add Tomato (medium size) - 1 (finely chopped)
Saute until tomato cooks completely
Once tomatoes are nice and soft and oil seperates
Add Carrot - 1/2 cup (sliced)
Potato - 1 cup chopped
Cauliflower(chopped and rinsed) - 150g
Fresh Peas - 1 cup (or frozen)
Mix well Cover and cook the vegetables 70 % to retain crunchiness in medium flame
After 5-7 minutes Add cooked Moong dal(Paasi Paruppu)
Salt - 1 tsp (or as required)
Add the grounded paste
Water - 1 cup (or as required)
Mix well and adjust consistency Cover and cook for 5 minutes in low to medium flame
Stir occasionally to avoid burning
Add Lemon juice - 1tsp
Coriander leaves - for garnishing(finely chopped)
Give a nice mix
Our Kumbakonam Kadappa is ready to serve!!!
