  1. Ingredients:

    For Roasting(Sambar Powder):


    Chana dal - 1 tbsp
    Coriander seeds - 1 tbsp
    Pepper - 1/4 tsp
    kashmiri red chilli - 2
    Red chilli - 1
    Curry leaves - few
    Fenugreek seeds(methi) - 1/8 tsp


    For Sambar:


    Moong dal(Paasi Paruppu) - 1/2 cup
    Water - 2 cup or (as required)
    Garlic - 4 cloves
    Turmeric - 1/2 tsp
    Ghee (or oil) - 2 tbsp
    Mustard seeds - 1/2 tsp
    Cumin Seeds - 1/2 tsp
    Cashew - 6
    Urad Dal - 1 tsp
    Asafoetida(Hing) - 1/8 tsp
    Onion - 2 sliced (or Small onion/Shallots - 15)
    Salt - 1.5 tsp(or as required)
    Curry leaves - few
    Tomato - 1 (finely chopped)
    Carrot - 1 cup chopped
    Beans - 1 cup chopped
    Cauliflower(Rinsed) - 1 cup chopped
    Potato - 1 cup chopped
    Tamarind (gooseberry size) - 1 ball
    Jaggery - 1/2 tsp
    Freshly grounded Sambar powder
    Coriander leaves for garnishing - handful

  2. Method of Cooking:

    Step 1 - Sambar Powder:


    Heat a Kadai in low to medium flame
    Dry roast all ingredients
    Chana dal - 1 tbsp
    Coriander seeds - 1 tbsp
    Pepper - 1/4 tsp
    Kashmiri red chilli - 2
    Red chilli - 1
    (For more spicy add kashmiri red chilli - 4,Red chilli - 2)
    Curry leaves - few
    Fenugreek seeds(methi) - 1/8 tsp,Saute well
    Once it turns Aromatic switch off the flame
    (Don't burn)
    Allow it to cool completely and Transfer to Mixer, grind it to a slight coarse powder
    Our Tiffin sambar powder is ready


    Step 2 - Pressure cook dal:


    In a Pressure cooker
    Add Rinsed Moong dal(Paasi Paruppu) - 1/2 cup
    Water - 2 cup or (as required)
    Garlic - 4 cloves
    Turmeric - 1/4 tsp
    Cover and pressure cook for 4-5 whistles or until dal is cooked well.
    Mash it and keep aside.


    Step 3 -Hotel Sambar Recipe:


    Heat a Kadai in medium flame
    Add Ghee (or oil) - 2 tbsp
    Mustard seeds - 1/2 tsp
    Once the seeds splutter
    Add Cumin Seeds - 1/2 tsp
    Urad Dal - 1 tsp
    Cashew - 6 (optional), Mix well
    Turns Aromatic
    Add Onion - 2 medium size sliced
    (or Small onion/Shallots - 15)
    Salt - 1.5 tsp(or as required)
    Turmeric powder- 1/4 tsp
    Asafoetida(Hing) - 1/8 tsp
    Curry leaves - few, Mix well
    Saute until the onions becomes translucent.
    Add Tomato - 1 (finely chopped)
    Stir until tomatoes are cooked well for 2-3 minutes.
    Add Carrot - 1 cup chopped
    Beans - 1 cup chopped
    Cauliflower - 1 cup chopped(Rinsed)
    Potato - 1 cup chopped, Stir well
    Cook the vegetables to 70 % to retain crunchiness in medium flame
    After 5-7 minutes
    Add Freshly grounded Sambar Powder
    Stir well for 1 minute, Turns Aromatic
    (Take Tamarind small gooseberry size, soak in 1/2 cup hot water for 30 minutes)
    Add tamarind extract, cook for 1-2 minutes till raw flavour leaves completely.
    Add cooked dal
    Jaggery - 1/2 tsp, Stir well.
    Add water required adjust consistency
    Add salt as required
    Cook for 5 - 10 minutes in medium flame
    Stir occasionally
    Turn off the flame
    Add some chopped Coriander leaves for garnishing.
    Our Delicious Hotel style sambar is ready to serve with Idli, Dosa, Pongal !!!
