  1. Ingredients:

    Brown Rice - 1/4 cup
    Matta Rice - 1/4 cup
    Kodo Millet(Varagu) - 1/4 cup
    Kambu (Bajra) - 1/4 cup
    Ragi (Finger Millet) - 1/4 cup
    Horse gram (kollu) - 1/4 cup
    Barley - 1/4 cup
    Black Urad Dal - 1/4 cup
    Urad Dal - 1/4 cup
    Green gram - 1/4 cup
    Javvarisi (sago/tapioca) - 1/4 cup
    Peanut - 1/4 cup
    Paasi paruppu - 1/4 cup
    Black channa dal - 1/8 cup
    White channa dal - 1/8 cup
    Almonds(Badam) - 1/4 cup
    Pistachios - 1/4 cup
    Cashews - 1/4 cup
    Roasted channa dal (pottu kadalai) - 1/4 cup
    Wheat Flour (broken wheat) - 1/4 cup

  2. Method of Cooking:

    Heat a Kadai on medium flame
    Add Brown Rice - 1/4 cup
    Dry roast for 1- 2 minutes or until nicely roasted
    Color changes slightly, don't burn
    Turns aromatic, transfer to a bowl
    Add Matta Rice - 1/4 cup
    (Similarly dry roast all the ingredients separately for 1- 2 minutes or until nicely roasted)

    Add Kodo Millet(Varagu) - 1/4 cup
    Follow the same process for all ingredients
    Kambu (Bajra) - 1/4 cup
    Ragi (Finger Millet) - 1/4 cup
    Horse gram (kollu) - 1/4 cup
    Barley - 1/4 cup
    Black Urad Dal - 1/4 cup
    Urad Dal - 1/4 cup
    Green gram - 1/4 cup
    Javvarisi (sago/tapioca) - 1/4 cup
    Peanut - 1/4 cup
    Paasi paruppu - 1/4 cup
    Black channa dal - 1/8 cup
    White channa dal - 1/8 cup

    Add Pistachios - 1/4 cup

    Dry roast for 30 sec - 1 min
    Turns aromatic, transfer it to the bowl
    Add Wheat Flour (broken wheat) - 1/4 cup
    Dry roast for 30 sec, don't burn
    Turns aromatic, transfer it to the bowl
    Allow all the ingredients to cool completely
    Transfer the mixture to a mixie jar in 2 batches.
    Grind it to a fine powder
    Sieve the powder using a fine mesh
    Store in an Airtight Container, you can use for months together

    Now let's prepare Sathu maavu kanji

    In a large mixing bowl take 1 cup of milk
    Add 1/4 cup of sathu maavu powder
    Brown sugar (white sugar) - 2 tbsp
    Cardamom powder - 1/8 tsp
    Salt - a pinch
    Using whisk give a nice mix
    Make sure there are no lumps
    Transfer to a saucepan
    Add 1 cup of milk
    Stir occasionally on medium flame
    Allow to boil for 5 -10 min or until the mixture thickens
    Give a nice mix and switch off the flame
