Ingredients:
Kashmiri red chilli - 8
Oil - 1tbsp
Chopped garlic - 1/3 cup
Chopped ginger - 1/3 cup
Jaggery - 1/2tsp
Salt - 1/4 tsp (as required)
Tamarind - small gooseberry sizeFor Tempering:
Oil - 2tbsp
Mustard - 1/2tsp
Cumin seeds - 1/4tsp
Urad dal - 1tsp
Curry leaves - few
Hing(Asafoetida) - 1/8tsp -
Method of Cooking:
First let's Soak Kashmiri red chilli - 8 and Tamarind - small gooseberry size in 1/2 cup hot water for 20 minutes.
Heat Oil - 1tbsp in a Pan
Add Chopped garlic - 1/3 cup
Saute for 1 minute
Add Chopped ginger - 1/3 cup
Saute well in medium flame for 2-3 minutes.
Don't burn
Allow to cool completely.
Transfer to the blender.
Add Salt - 1/4 tsp (as required)
Jaggery - 1/2tsp (optional)
Add soaked Kashmiri red chilli and Tamarind along with the water.
Grind slight coarsely, Keep aside.
Heat oil - 2tbsp in a pan
Add Mustard - 1/2tsp
Once splutter, add Cumin seeds - 1/4tsp
Urad dal - 1tsp
Curry leaves - few
Hing(Asafoetida) - 1/8tsp
Saute well, Turns aromatic.
Add prepared paste into the pan.
Add water required
Adjust consistency
Saute well in medium flame
Add salt required
Saute well in medium flame for 5minutes, until oil separates from the pan.
In this stage you can stop and use as chutney
Saute well in medium flame for another 2 minutes, to get thokku consistency
Our Spicy and tasty, Ginger Garlic Thokku is ready!!!
Serve with Hot Idly,Dosa and Uthappam!!!
