  1. Ingredients:

    Rice (rinsed) - 1/2 cup
    Water - 1cup
    Milk - 1cup
    Salt - 1/2 tsp
    Whipping cream - 1/2 cup
    Ghee - 2tbsp
    Mustard - 1 tsp
    Cumin (Jeera) - 1 tsp
    Urad dal - 1 tsp
    Chana dal - 1 tsp
    Cashew - 2 tbsp
    Onion - 1/4 cup
    Green chilli - 2 (finely chopped)
    Ginger - 1 inch (finely chopped)
    Curry leaves - few
    Hing (asafoetida) - 1/8 tsp
    Curd (yogurt) - 1cup
    Carrot - 2 tbsp (grated)
    Corriander - few (finely chopped)

  2. Method of Cooking:

    In a pressure cooker
    Add Rice - 1/2 cup (rinsed)
    Water - 1cup
    Milk - 1cup
    (Milk is added to get creamy consistency, you can also skip milk and add 2 cup water )
    Salt - 1/2 tsp
    Give a stir.
    Cover and Pressure cook for 4 - 5 whistles on medium flame(or cook until it is soft and mushy)
    Mix well
    Transfer to a bowl
    Add Whipping cream - 1/2 cup
    Mix well and keep aside.

    Now let's give Tempering

    Heat a Kadai
    Add Ghee - 2tbsp
    Mustard - 1 tsp
    Cumin (Jeera) - 1 tsp
    Urad dal - 1 tsp
    Chana dal - 1 tsp
    Cashew - 2 tbsp
    Saute well
    Splutter Tempering
    Add Onion - 1/4 cup
    Give a stir
    Add Green chilli - 2 (finely chopped)
    Ginger - 1 inch (finely chopped)
    Give a stir
    Curry leaves - few
    Hing (asafoetida) - 1/8 tsp
    Saute well, until the onions becomes translucent.
    To the cooked rice
    Add Curd (yogurt) - 1cup
    Mix well.
    Carrot - 2 tbsp (grated)
    Corriander - few (finely chopped)
    Add the tempering
    Mix well.
    Add salt if required.
    Our Soft and Creamy Curd Rice is ready to serve!!!
    Serve Thayir sadam with your favorite curry!!!
