Ghee - 5 tbsp
Cashew nuts - 10-15 nos
Raisins (dry grapes) - 1 tbsp
Sooji (Rava) - ½ cup
Milk - 1 cup (or water 1 cup)
Brown sugar (White sugar) - ½ cup (or as required)
Orange food color - 4-5 drops
Cardamom power (elachi powder) - ¼ tsp
Heat 2 tbsp of ghee(Clarified butter) in a non-stick pan.
Add Cashew nuts - 10-15 nos
Raisins (dry grapes) - 1 tbsp
Roast in medium flame.
Once the cashews turn golden brown and Raisins swollen, keep aside.
In the same pan
Add Sooji (Rava) - ½ cup
Roast for 5-7 minutes in medium flame.
Once the rava turns golden color and aromatic, switch off the flame and keep aside.
In a large kadai
Boil Milk - 1 cup (or water 1 cup).
Keeping in low flame, add roasted Sooji (Rava) - ½ cup
Stir continuously until the rava absorbs milk(water)
(Make sure no lumps are formed)
Now add Brown sugar (White sugar) - ½ cup (or upto 1 cup as you prefer)
Stir continuously in low flame until sugar dissolves completely.
(Make sure no lumps are formed)
Now add Ghee - 3 tbsp
Mix well in low flame
Add Orange food color - 4-5 drops
Stir continuously in low flame for 2 minutes.
(Make sure no lumps)
Once the rava cooked completely and the mixture is combined well.
Add roasted cashews and raisins
Cardamom power (elachi powder) - ¼ tsp
Stir continuously in low flame for 1 minute
Once the rava kesari doesn't stick to the pan switch off the flame.
