  1. Ingredients:

    1/4 cup Moong Dal (Pasi Paruppu) 50 gram
    1 tbsp Whole Wheat flour or Wheat flour or Maida
    1 cup Brown Sugar (100 gram)
    1/4 cup Ghee (60 ml)
    2-3 tbsp Cashews
    4-5 drops Orange food color (optional)
    1/4 tsp Cardamom powder

  2. Method of Cooking:

    Step 1:

    Add Rinsed Moong Dal(Pasi Paruppu) - 1/4 cup(50gm) to a cooker
    Add 1 cup water or as required.
    Cover and pressure cook for 4-5 whistles or until dal is cooked well.
    Cool the dal completely and Transfer to a mixer
    Add 2-3 tbsp of water to get a smooth and creamy paste if required.
    Grind it smooth paste.

    Step2:

    Heat 2 tbsp of ghee(Clarified butter) in a non-stick pan.
    Add 2 tbsp Cashews
    Roast until cashews turns golden brown and Keep aside
    In the same pan add 1 tbsp Whole Wheat flour or Wheat flour or Maida
    (Wheat flour is added to get perfect texture)
    Roast in low flame until the flour turns aromatic
    (Make sure no lump)
    Add the moong dal paste and cook for
    2-3 minutes.
    Stir continuously in medium flame to avoid burning.
    After the paste is fully absorbed by the ghee, mixture starts to thicken.
    Now add 1 cup of brown sugar(100gm)or white sugar, mix well.
    Cook on medium heat for 3-5 minutes, sugar dissolves completely.
    The mixture turns glossy.
    Now add 1tbsp of ghee, stir continuously.
    Add 1/4 tsp Cardamom powder, mix well.
    Add a pinch of salt to enrich taste.
    I added 2 drops of red food color and 3 drops of yellow food color to get orange color.
    Add 4-5 drops of orange food color(optional).
    Stir continuously, until color spreads evenly.
    Again add 1 tbsp of ghee, stir continuously few minutes in medium flame.
    The mixture rotates together without sticking to the pan.
    Add roasted cashews, mix well.
    Switch off the flame otherwise it starts caramelizing.
    Finally add 1 tbsp of ghee and mix well.
    Our Yummy and delicious, Ashoka halwa is ready to serve with hot Tea!!!
